Mandarin Fish with Dried Shrimp and Loofah
A classic Zhejiang home-style stir-fry pairing mandarin fish fillets, dried shrimp, and luffa, with a fresh, subtly sweet flavor.
Ingredients
Mandarin fish fillet (rinsed and patted dry, cut into double slices)

Dried large shrimp (rinsed)

Loofah (peeled, rinsed, cut into pieces)

Chicken broth

Salt (marinade)

Instructions

Marinate the fish
Rinse and pat dry the mandarin fish, cut into double slices, mix with the marinade and let sit for about 10 minutes.

Prep the dried shrimp and loofah
Rinse the dried shrimp, place on a plate with 1 slice of ginger, steam for 5 minutes until softened; peel the loofah, rinse, and cut into pieces.

Quickly stir-fry the fish slices
Heat 4 tbsp of oil, briefly stir-fry the fish slices until just cooked through and changed color, then remove.

Cook the final dish
Sauté ginger slices and loofah in oil until fragrant and softened, add chicken broth and water and bring to a boil until the loofah is tender, add the steamed dried shrimp and fish slices and toss to combine, season to taste and serve.
