Marmalade Squares

A square dessert combining candied citrus peel, pecans, and orange marmalade; it can also be cut into bars.

Marmalade Squares

Ingredients

all-purpose flour 350 g
butter (cubed) 200 g
light brown sugar / dark brown sugar 150 g
baking soda 1/2 tsp
egg (beaten) 1
heavy cream (liquid) 120 ml
pecans (chopped) 50 g
mixed candied peel 50 g
orange marmalade 6 tbsp
fresh orange juice (for glaze) 1-2 tbsp

Instructions

Preheat oven

Preheat oven to 190°C (th. 6). Line the bottom of a 28 x 18 cm baking pan with parchment paper.

Make the crust base

In a bowl, mix flour and butter. Add sugar, then spread half of the mixture over the bottom of the pan. Press firmly. Bake for 10 to 15 minutes, until it starts to turn golden. Let cool.

Make the filling

Add baking soda, egg, cream, pecans, candied peel, and half of the marmalade to the remaining flour mixture. Mix thoroughly.

Bake

Pour the mixture over the cooled crust, return to the oven and bake for 20 to 25 minutes, until the filling is set and starts to brown.

Make the glaze

Heat the remaining orange marmalade over low heat in a small saucepan. Add enough fresh orange juice to get a runny glaze. Brush over the baked cake while warm.

Cut into pieces

After cooling, cut into squares or bars.
