Merveilles

French fried doughnuts, also known as bugnes, are a traditional fried snack from the Lyon region of France.

Ingredients

Salted butter (softened and cut into small cubes) 100 g
Flour 500 g
Eggs 4
Powdered sugar 100 g
Rum 2 tbsp
Yeast 1 packet
Powdered sugar (for dusting) to taste
Vegetable oil (for frying) to taste

Instructions

Make the dough

Mix the flour and yeast, making a well in the center. Add the sugar, butter cubes, eggs, and rum. Knead with your fingertips to combine, form into a ball, wrap in plastic film, and refrigerate for about 30 minutes.

Shape the cookies

Divide the dough into 3 or 4 portions and roll out on a lightly floured surface. Cut into small rectangles about 4 cm long. Make a slit in the middle and pull one end of the dough through the slit to form a knot.

Fry

Heat oil in a deep fryer or heavy pot. Test the temperature by dropping in a small piece of dough: if it floats, the oil is ready. Fry the dough until golden, being careful not to let it darken too much.

Finish

Drain on paper towels. Dust with powdered sugar and serve immediately. Can be stored in a cookie tin for several days.
