Milwaukee Rye Bread

Ingredients

active dry yeast 1.5 packs
hot potato water 2 cup
salt 1 tbsp
rye flour 4 cup
wheat flour 2 cup
mashed potatoes (firm packed) 1 cup
fennel seeds 1 tsp

Instructions

Dissolve Yeast

Dissolve the yeast in 1/4 cup of warm liquid. Add the remaining liquid.

Mix Dough

Stir in the remaining ingredients. Knead until smooth and elastic.

Ferment and Shape

Ferment in a warm place until doubled in volume. Shape into a loaf. Place in a bread pan. Let it ferment again.

Bake

After doubling in volume, brush the surface with water. Bake at 375°F for 1 hour or longer.
