Prepare the bowl
Lightly coat the inside of a heatproof steaming bowl with vegetable oil. This prevents the custard from sticking and makes cleanup much easier.
Mix the egg base
Crack the eggs into a bowl and beat until well combined. Add the salt, then slowly pour in the water while stirring constantly. The water-to-egg ratio should be about 1:1 for a silky texture.
Cook the pork
Heat a small pan over medium-high heat. Add the ground pork and cook until browned, breaking it up with a spatula. Stir in the soy sauce and cook for another minute. Remove from heat.
Combine and steam
Pour the egg mixture into the oiled bowl. Top with the cooked minced pork. Place the bowl in a steamer and steam over medium-high heat for about 15-18 minutes until the custard is set but still jiggly.
Finish and serve
Remove from the steamer. Drizzle with sesame oil and sprinkle the chopped green onions on top. Serve immediately while hot.
