Minced Pork with Spinach

Ingredients

fresh spinach 1 bunch (about 200g)
ground pork 150g
sweet bean sauce (tianmianjiang) 2 tablespoons
cooking wine 1 tablespoon
cornstarch 1 teaspoon
soy sauce 1 teaspoon
sugar 1/2 teaspoon
vegetable oil 2 tablespoons
salt to taste

Instructions

Prepare the spinach

Bring a pot of water to a boil. Add the spinach and blanch for about 30 seconds until just wilted. Drain well and arrange on a serving plate.

Cook the pork

In a bowl, combine the ground pork with cooking wine, cornstarch, and a pinch of salt. Heat oil in a wok or skillet over medium-high heat. Add the pork mixture and stir-fry until cooked through, breaking it up as it cooks. Remove and set aside.

Make the sauce

Reduce heat to low. Add the sweet bean sauce to the wok and stir-fry until it becomes fragrant and slightly darker in color, about 1 minute. Return the cooked pork to the wok.

Finish and serve

Add soy sauce and sugar to the pork mixture. Stir well to coat everything evenly. Spoon the savory pork topping over the arranged spinach and serve immediately.
