Prepare the dough
Preheat the oven to 200°C (th. 7). In a bowl, mix flour and butter, rub together until it reaches a breadcrumb-like consistency. Add diced mozzarella and Mimolette cheese, and mix thoroughly.
Mix wet ingredients
In another container, mix pesto, eggs, and milk, then quickly stir the mixture into the flour-butter blend.
Shape and bake
Scoop spoonfuls of batter onto a non-stick baking sheet. Sprinkle with grated Parmesan and chopped nuts. Bake for 12 to 15 minutes, until the mini crisp biscuits puff up and turn golden brown. Place on a cooling rack to cool.
