Mixed Fruit Duck
The duck is seared until golden, then finished in the oven, accented with peach and fig flavors.
Ingredients
Ripe peaches (blanched in boiling water, peeled and pitted)

Fresh figs (peeled, white skin parts retained)

Sugar (dissolved in the water used to boil the peaches)

Prepare the fruit
Place the peaches in a pot of boiling water to blanch, then remove and set aside. Reserve the blanching water for later use. Next, peel and pit the peaches, and peel the figs while keeping the white skin parts intact.

Pan-fry the duck
Preheat the oven to 180 degrees. Pan-fry the duck in oil until golden brown, which takes about 15 minutes, then remove the duck and place it in a roasting pan.

Roast and season
Sprinkle salt and pepper on the duck in the roasting pan, then place it back in the oven to roast for an additional 45 minutes. Dissolve the sugar in a suitable amount of the reserved peach boiling water.
