Mo Family Dried Tofu Shreds

Ingredients

Yellow soybean tofu (cut into shreds, blanched in boiling water) 10
Shrimp (coated with starch) 75g
Cooked ham (shredded) 15g
Green vegetable leaves a pinch
Bone broth 500g
Shaoxing wine 10g
MSG 2g
Salt 5g
Cooked pork lard 25g

Preparation

Cut the dried tofu into shreds and blanch in boiling water; coat the shrimp with starch.

Slip-fry the shrimp

Heat a wok with pork lard to about 40% hot, add the shrimp and slip-fry, then drain off the oil.

Simmer

Leave a small amount of oil in the wok, add the broth and Shaoxing wine, then add the shredded tofu and bring to a boil.

Season and plate

Add salt, MSG, and green vegetable leaves, immediately transfer to a serving dish, sprinkle with ham shreds, and serve.
