Ingredients

Beef tenderloin, trimmed (cut into round shape blocks, tenderized with the back of a knife) 500 g
Potato (cut into strips, boiled in salted water for about 3 minutes, then deep-fried until golden) 150 g
Chilli soy sauce 25 g
Tomato sauce 15 g
Sugar a pinch
Baking soda 3 g
Water chestnut starch 3.5 g
Butter a pinch
Egg yolk 1
Fine salt a pinch

Instructions

1

Marinating the steak

Trim the beef tenderloin and cut it into round-shaped blocks of about 200 g each. Tenderize each block with the back of a knife, then combine with wine, baking soda, salt, egg yolk, water chestnut starch, and 50 g of water. Mix well and marinate for about one hour.

2

Preparing the side dish

Cut the potatoes into strips (slightly thicker than a finger). Boil in salted water for about 3 minutes, then deep-fry in hot oil until golden. Remove and arrange on one side of the serving plate.

3

Pan-frying the steak

Place the marinated beef tenderloin into a wok of hot oil and pan-fry both sides until golden. Drain off the oil, then add tomato sauce, chilli soy sauce, and sugar. Simmer slowly until the sauce reduces and almost dries up. Transfer the steak to the other side of the plate and serve immediately.
