Moo Shu Tofu

Moo Shu Tofu

Ingredients

Tofu (cut into small cubes) 1 tael
Eggs (beaten in a bowl, pan-fried into an omelet and diced) 1 tael
Dried daylily buds a pinch
Wood ear mushrooms a pinch
Salt a pinch
Soy sauce a pinch
Chopped scallions (some for frying the base) a pinch
Sichuan pepper powder a pinch

Ingredient Preparation

Cut the tofu into small cubes. Beat the eggs in a bowl until smooth.

Pan-fry the Eggs

Heat oil in a pan, pour in the beaten eggs, and fry into a thin omelet. Remove, let cool slightly, then cut into small cubes.

Stir-fry

Heat a little oil in the wok, fry the chopped scallions to build the base, then add the dried daylily buds, wood ear mushrooms, tofu cubes, egg cubes, salt, and Sichuan pepper powder in sequence. Stir-fry briefly until everything is well combined and serve.
