Multicolored Wotou

These multicolored wotou are steamed cornmeal buns filled with a savory stir-fry of pork and mixed vegetables. The dough combines cornmeal, bean flour, and millet flour with a little wheat flour for a softer texture.

Ingredients

Cornmeal 100g
Bean flour 30g
Millet flour 30g
All-purpose flour 60g
Sugar 10g
Baking soda 1.5g
Corn kernels 30g
Peas 30g
Carrot half a root
Wood ear mushroom a small pinch
Pork a piece
Scallion to taste
Ginger two slices
Salt to taste
Light soy sauce 1 teaspoon

Instructions

Step 1

First put the cornmeal into a mixing bowl, add boiling water, and stir into a floc-like texture.

Add soybean flour, millet flour, and wheat flour.

Dissolve baking soda in water and drizzle it into the flour.

Add clear water in small amounts several times and mix into a dough.

After letting the dough rest for fifteen minutes, roll it into a long strip and divide it into small portions.

Shape them into small bowls by hand.

Line with corn husks, place in a steamer, and steam for 20 minutes after the water boils.

Next, prepare the side dish; dice all the ingredients and set aside.

Put an appropriate amount of peanut oil in the pan; first stir-fry the diced pork until it changes color, then add green onion, ginger, and dried red chili peppers, and stir-fry until fragrant.

Add the diced carrots, stir-fry for one minute, then add peas, corn kernels, and diced wood ear mushrooms.

Stir-fry over medium heat for two minutes, add salt and a little light soy sauce, mix evenly, then remove from the pan.
