Mung Bean and Barley Sweet Soup
A sweet soup made with mung beans and Job's tears, soaked and cooked separately before being combined and sweetened with sugar.
Ingredients
mung beans (cleaned, soaked in 6 cups of water for 1 hour)
300 g
barley (cleaned, soaked in 5 cups of water for 2 hours)
150 g
sugar
300 g
water (6 cups for boiling mung beans, 5 cups for boiling barley, plus 5 additional cups after mixing)

Instructions

Step 1
Clean the mung beans, soak in 6 cups of water for 1 hour, then bring to a boil, reduce heat to low and cook until soft.

Step 2
Clean the barley, soak in 5 cups of water for 2 hours, steam in a rice cooker until tender, then add to the mung beans, add 5 more cups of water and stir to combine.

Cook until the mixture is soft and mushy, add sugar to taste, stir well, then turn off the heat and serve.
