Instructions

1

Preparation

Place the oven rack in the center of the oven and preheat to 350°F. Line a 9-inch square baking pan with aluminum foil, leaving 2 inches of foil overhanging on two opposite sides. Butter the foil.

2

Mix Dry Ingredients

In a medium bowl, mix together the oats, flour, cinnamon, ginger, salt, and baking powder. Stir in the brown sugar (breaking up any clumps), chopped apricots, almonds, and wheat germ.

3

Mix Wet Ingredients

In another medium bowl, whisk together the egg, vegetable oil, honey or syrup, and vanilla extract. Stir the wet ingredients into the oat mixture until just combined (the mixture will not be very moist). Scrape the batter into the baking pan and smooth the top. Bake for 25 to 30 minutes, until golden brown. Place the pan on a cooling rack and cool completely.

4

Unmold

Invert the bar onto a baking sheet or plate and peel off the foil. Invert the bar back onto a cutting board.

5

Make the Glaze

In a small bowl, whisk all the glaze ingredients until smooth. Scrape the glaze into a small resealable plastic bag and seal it. Snip a small hole in one bottom corner of the bag with scissors. Drizzle the glaze in a zigzag diagonal pattern over the bar. Let the glaze set for 10 minutes.

6

Cut into Pieces

Cut the bar into 16 pieces.
