Oil-Braised Sea Shrimp

Ingredients

Fresh sea shrimp (rinsed in water, whiskers and feet trimmed, back slit and vein removed) 500 g
Cooking oil (for stir-frying) 40 g
Salt (about 1/3 tsp) to taste
MSG (about 1/3 tsp) to taste
White pepper (about 1/3 tsp) to taste
Scallion (washed and sliced) 20 g
Ginger (washed and sliced) 20 g
Cooking wine (added during cooking) 1 tbsp

Instructions

1

Prepare the shrimp

Rinse the shrimp thoroughly in clean water, trim off the whiskers and feet, slit open the back and remove the vein completely. Wash the scallion and ginger, then slice them.

2

Braise

Heat the cooking oil in a pan until hot, then add the shrimp and stir-fry. Once the shrimp turn a bright red color and release their oil, add the sliced scallion and ginger, splash in the cooking wine, pour in about 4 tbsp of water or broth, then add the salt, MSG, and white pepper and bring to a boil. Simmer for about 1 minute, then reduce the sauce until thickened. Transfer the shrimp to a serving plate and pour the sauce over them before serving.
