Oil-Splashed Herring

Ingredients

herring (scaled, gutted and cleaned; scored diagonally on both sides) 750 g
shredded scallion and ginger (some for marinating, some for garnish after steaming) to taste
cooking wine 15 g
salt 3 g
MSG 7 g
soy sauce 25 g
white pepper powder to taste
white sugar to taste
coriander segments 15 g
shredded ham 15 g
shredded bamboo shoots 25 g

Instructions

Marinating

Clean the herring after removing scales and internal organs, score diagonally on both sides of the fish body, place it on a plate, sprinkle with salt, cooking wine, white pepper powder and an appropriate amount of shredded scallion and ginger, then marinate

Steaming

Sprinkle coriander segments, shredded ham and shredded bamboo shoots over the fish, place it in a steamer and steam over high heat for 15 minutes, then take it out and drain off excess liquid

Replacing Garnish

Remove the shredded scallion and ginger from the steamed fish, replace with fresh shredded scallion, ginger and coriander segments

Seasoning

Mix soy sauce, MSG and white sugar in a bowl to make a sauce, then pour it over the fish

Splashing Hot Oil

Heat oil in a ladle until it reaches 80% heat, splash it over the fish and serve
