Onion Ring Fritters
Classic fried onion rings—crispy on the outside and tender within. Serve as an appetizer with mayonnaise or hot sauce.
Ingredients
eggs (separated)

flour
225 g
beer
20 cl
olive oil
2 tbsp
large onions

1 tsp
freshly ground pepper
to taste
Instructions

Make batter
Separate egg yolks and whites; keep whites aside. In a large bowl mix flour, egg yolks, beer and oil. Stir with a spatula until batter is smooth. Add salt and pepper to taste. Cover with cloth and let rest for 1 hour.

Prepare onions
Peel onions, cut into medium-thick slices, separate into rings, keep only the largest rings.

Fry
Heat frying oil. Whip egg whites to stiff peaks, gently fold into batter. Coat onion rings one by one with batter, place in hot oil. Fry for 2-3 minutes until golden, remove and drain on paper towels. Serve hot.
