Story

This unique recipe infuses the aromatic, floral notes of oolong tea directly into the chicken. The combination of spareribs sauce and tea creates a complex, umami-rich glaze that caramelizes beautifully during cooking.

Ingredients

Chicken wings 500g
Oolong tea leaves 2 tbsp
Spareribs sauce (or hoisin sauce) 2 tbsp
Soy sauce 1 tbsp
Salt 1 tsp
White liquor or cooking wine 1 tsp

Prepare the Tea

Brew the oolong tea leaves in hot water to soften them. Drain the water and finely chop the moist tea leaves.

Create the Marinade

In a large bowl, combine the chopped tea leaves, spareribs sauce, soy sauce, salt, and white liquor. Mix well until the sauce is uniform.

Marinate the Chicken

Add the chicken wings to the bowl and toss thoroughly to coat every piece. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate the meat.

Preheat your oven to 200°C (400°F). Arrange the marinated wings on a baking sheet and roast for 20-25 minutes, or until the skin is crispy and golden brown.
