Orange Almond Tuiles

Ingredients

cake flour 100 g
powdered sugar 125 g
sliced almonds 150 g
whole egg 1
egg whites 2
orange zest (zest of 1 orange) 2-3 tsp
unsalted butter, melted 3 tbsp

Instructions

1

Make the batter

Preheat the oven to 200°C (400°F / Gas mark 6). Butter a baking sheet. Sift in the flour and powdered sugar, then stir in the sliced almonds. Add the whole egg and egg whites and mix until smooth, then fold in the orange zest and melted butter.

2

Shape and bake

Drop walnut-sized spoonfuls of batter onto the baking sheet and flatten each with the back of a fork dipped in cold water. Bake only one sheet at a time so you have enough time to shape them. Bake for 4 to 5 minutes, until the edges are golden brown and the centers are pale.

3

Shape and store

Remove from the oven and, while still hot, drape each cookie over a rolling pin to form a tuile (tile) shape. Let cool completely before storing. Keep in an airtight container for 3 to 4 days, or freeze for 3 to 4 weeks.
