Orange Cheese Pie
A chilled dessert with a soda cracker and melted butter crust, filled with a mixture of cream cheese, egg yolks, orange juice, and other ingredients.

Preparation
Prepare an 8-inch chrysanthemum tart pan; soften the cream cheese at room temperature; soak the gelatin sheets in ice water until soft.
Making the crust
Place the soda crackers in a plastic bag and crush them into powder with a rolling pin, then mix evenly with the melted butter. Press firmly into the tart pan with your hands and freeze until hard.
Making the filling
Beat the cream cheese until soft. Heat the egg yolks and caster sugar over a bain-marie to 85°C, then immediately add the softened gelatin sheets and stir until melted. Add the softened cream cheese to the egg yolk mixture and stir until smooth.
Mixing and seasoning
Mix the orange juice, lemon juice and some lemon zest together, then fold into the cheese and egg mixture. Fold in the whipping cream that has been whipped to soft peaks.
Chilling and setting
Pour into the frozen crust and smooth the surface, sprinkle the remaining lemon zest on top, refrigerate for 2-3 hours, then remove and cut into slices to serve.
