Original Waffles

Many home cooks invest in a breakfast maker with interchangeable plates for sandwiches, waffles, and other shapes, only to let it gather dust after one or two uses — wasting both money and the machine itself. Here is a foundational recipe for plain waffles that can be made crisp or soft. Follow the tips below and adjust the ingredients to create more than ten flavor and color variations.

Ingredients

eggs 2
low-gluten flour 90g
fine sugar 40g
milk 60g
corn oil 30g
cornstarch 25g
baking powder 6g

Instructions

1

Step 1

Prepare all ingredients: standard-sized eggs, fine sugar, milk, corn oil, low-gluten flour, cornstarch, and double-acting aluminum-free baking powder. If you want to make multi-flavored or colorful waffles, you can replace an equal amount of low-gluten flour with natural fruit and vegetable powders such as matcha powder, strawberry powder, or cocoa powder.

2

Step 2

First, mix the low-gluten flour, cornstarch, and baking powder together, then sift the mixture.

3

Step 3

Separate the egg whites from the egg yolks, and pour the egg whites into a clean, oil-free and water-free mixing bowl.

4

Step 4

Use the chiffon cake egg white whipping method: whip at medium-low speed, adding the fine sugar in 3 separate batches.

5

Step 5

Whip until the meringue is smooth and glossy. Lift the whisk, and the meringue should form a small curved or straight peak.

6

Step 6

Pour the egg yolks into the meringue.

7

Step 7

Whip at low speed for 1 minute. Lift the whisk, and the batter should form a large curved peak; the batter is smooth and glossy.

8

Step 8

Pour the milk into the corn oil, and whisk evenly with a manual whisk until there are no oil droplets.

9

Step 9

Pour the milk-corn oil mixture into the batter bowl, and fold it evenly with a whisk.

10

Step 10

Sift the dry ingredient mixture into the batter.

11

Step 11

Mix evenly with a whisk. This is the waffle batter: it is very smooth, has no obvious air holes, and has a flowing consistency.

12

Step 12

While mixing the batter, you can preheat the waffle maker; it usually takes 3 minutes to heat evenly. Scoop an appropriate amount of waffle batter onto the baking plate. If you don't mind the shape, just scoop an appropriate amount. If you want neatly shaped waffles, scoop a little more batter and spread it to the edges so that the grid is fully filled when the top plate is pressed down.

13

Step 13

Lower the top heating plate and heat for 2-3 minutes, adjusting the time based on your preferred texture. For soft waffles, around 2 minutes is enough; for crispy waffles, heat for 2-3 minutes. Heating power varies by brand, so the heat intensity may differ.

14

Step 14

When a fully heated waffle is lifted, it should fall off on its own. If it doesn't fall off, the top heating plate is not hot enough. If part of the waffle sticks to the bottom baking plate, the overall heating time is insufficient and needs to be extended appropriately. Well-baked waffles have clear grid patterns; they are crispy right out of the maker, and become soft after cooling for a while. You can eat them directly, or serve them with jam, yogurt, nuts, fruit, etc.

Step 15

Original waffles are soft and sweet!
