Ingredients

dog shoulder meat (soak in clean water and wash) 200 g
beaten egg 100 g
refined white flour 150 g
cooking wine 10 g
fine salt 2 g
MSG 2 g
vegetable oil (for deep-frying) 1.5 kg
minced scallion (or chopped scallion) 5 g
sesame oil 10 g
sesame salt (served on the side) 15 g

Instructions

1

Preparation

Soak the dog shoulder meat in clean water, wash it well, and place it on a cutting board. Slice it into large pieces about 2 cm thick, then score each piece with a crosshatch pattern. Cut the scored pieces into slices 5 cm wide and 7 cm long, and place them in a porcelain bowl. Add the cooking wine, fine salt, and MSG, mix well to season, then stir in the beaten egg along with 100 ml of clean water. Add the refined white flour and stir until evenly coated. Set aside for later use.

2

Frying

Heat a wok over the flame, add the vegetable oil, and heat until moderately hot. Slip the meat slices into the oil one by one and fry until they turn a tender yellow, then pour them into a strainer to drain off the excess oil. Leave about 15 g of oil in the wok, add the minced scallion and stir-fry until fragrant, then add the osmanthus-style dog meat and drizzle in the sesame oil. Toss the mixture quickly a few times, then transfer to a serving plate.
