Dice pork tenderloin to rice-grain size, coat with batter and quick-fry. Serve with cooked green peas, and arrange with carrot fish-paste rolls and red pepper strips into a palace-lantern presentation.

Palace Lantern Pork Tenderloin

Ingredients

pork tenderloin 400 g
cooked green peas 75 g
egg white 1
Shaoxing wine 7 g
MSG 5 g
wet cornstarch 20 g
fine salt 5 g
salad oil (roughly 50 g actually consumed) 1000 g
carrot fish-paste rolls to taste
red bell pepper 2

Step 1: Prep the Pork

Cut the pork tenderloin into fine rice-grain-sized dice. Add 1 egg white and mix well with Shaoxing wine and salt. Coat with wet cornstarch. Shell/peel the green peas and set aside.

Step 2: Shape the Lantern

Lantern shaping: Take the carrot fish-paste rolls and steam in a steamer until cooked through. Cut them and arrange them into a lantern shape. Slice the red bell pepper into fine strips to serve as the lantern tassel, then arrange everything into a palace-lantern outline.

Step 3: Add the Details

Use the processed small garnishes to make the lantern handles and hanging ribbons.

Step 4: Stir-Fry the Pork

Heat a wok over medium heat. Add the oil. When the oil reaches roughly 40% hot (about 120 °C / 250 °F), add the pork dice and stir-fry, separating the pieces, until just cooked through.
