Pan-Braised Triple-Layered Ham

Slices of white-cooked lean pork are layered with ham and minced chicken filling, then pan-fried and braised until the sauce is thick and rich.

Pan-Braised Triple-Layered Ham

Ingredients

lean cooked ham (sliced) 100 g
pork fat (minced) 70 g
boiled lean pork (cut into 9 cm long × 4.5 cm wide slices) 250 g
chicken breast (minced) 100 g
eggs (beaten in a bowl) 2
salty bread (square-shaped) 400 g
lettuce leaves 150 g
cooked lard 100 g
pork bone broth 100 g
flour 30 g
sugar 20 g
sweet bean paste 20 g
cooking wine (10 g for filling, 10 g for cooking) 20 g
minced ginger a pinch
salt to taste
MSG to taste

Instructions

Step 1

Mince the pork fat and chicken breast, place in a bowl, add salt, cooking wine (10 g), minced ginger, and MSG (a pinch), and mix well to make the filling. Slice the ham. Beat the eggs in a bowl until well mixed.

Step 2

Cut the boiled lean pork into 9 cm long × 4.5 cm wide slices, place them on a cutting board, stand them upright and arrange 6 slices side by side to form a rectangle. Spread the prepared filling evenly over the top, then arrange ham slices offset from the meat seams. Cover with another layer of pork slices and press firmly to form the layered ham block.

Make a horizontal cut through the center of each ham block to make 2 pieces from each, then sprinkle flour over the top.

Heat lard in a pan over low heat, dip the four sides of each ham block in the egg mixture, then pan-fry in the pan until golden brown. Add the pork bone broth, cooking wine, and MSG.

Once the sauce has thickened, it is ready to serve.
