Ingredients

Diao fish to taste
Green chili peppers to taste
Cooking oil to taste
Red chili peppers to taste
Sichuan peppercorns to taste
Cilantro to taste
Scallions to taste
Salt to taste

Instructions

Prepare the ingredients shown above: diao fish, Sichuan peppercorns, ginger, garlic, cilantro, scallions, and chili peppers.

Wash and remove the scales from the diao fish.

Make a cut along the belly.

Remove the innards and clean thoroughly.

Rinse until clean like this — be sure to thoroughly scrape off the black membrane inside.

Drain all the fish well, or pat them dry with paper towels.

Finely chop the ginger and garlic, slice the chili peppers into rings, and set aside.

Heat the oil in a pan and add the Sichuan peppercorns.
