Peanut Brittle Bars

Ingredients

Unsalted butter (softened) 8 tbsp (1 stick)
Granulated sugar ¼ cup
Light brown sugar ¼ cup
Vanilla extract (pure vanilla extract) ½ tsp
All-purpose flour 1 cup
Salted peanuts (coarsely chopped) ½ cup

Preheat oven

Preheat the oven to 375°F. Prepare an ungreased 8-inch square baking pan.

Make the dough

Using an electric mixer, beat the butter in a large bowl until creamy. Add the granulated sugar and brown sugar, and beat until fully combined. Mix in the vanilla extract. On low speed, beat in the flour, then stir in the peanuts. Transfer the dough to the baking pan and press it evenly with your fingers to form a firm, smooth layer.

Bake

Bake for 22 to 24 minutes, until golden.

Cut

Cool in the pan for 5 to 10 minutes. While still warm, cut into 16 squares. (Warning: it will be very difficult to cut if completely cooled.)

Cool and store

Cool in the pan for another 10 minutes, then remove the bars with a narrow metal spatula. Place on a wire rack to finish cooling.
