Peanut Butter Chicken Skewers

Ingredients

chunky peanut butter 1/2 cup
vegetable oil 1/2 cup
white wine vinegar 1/4 cup
soy sauce 1/4 cup
lemon juice 1/4 cup
brown sugar 1 tablespoon
chili powder or crushed red pepper flakes 2 teaspoons
ground ginger 2 teaspoons
boneless, skinless chicken breasts (cut into 1-inch-wide strips) 2 pounds
green onions (trimmed and halved) 12

Instructions

1

Make the marinade

Blend the first nine ingredients in a blender. Cover and blend until smooth; if the mixture is too thick, add a few drops of water.

2

Marinate

Pour the mixture into a large resealable plastic bag. Cut the chicken into 1-inch-wide strips and add it to the bag. Seal the bag and toss to coat. Refrigerate for at least 2 hours.

3

Prepare the skewers

Drain the chicken and discard the marinade. Cut off the top 3 inches of the green portion of each green onion; halve the remaining onions. Thread one onion onto each metal or soaked wooden skewer. At the end of each skewer, thread two or three chicken strips, followed by another piece of onion.

4

Grill

Cook uncovered over medium-low heat, turning every 3-5 minutes, for 15-20 minutes, until the juices run clear.
