Peanut Butter Wafer Sandwiches

Ingredients

butter (cubed) 65 g
powdered sugar 65 g
crunchy peanut butter 115 g
fan-shaped wafer cookies 12 slices
dark chocolate 50 g

Instructions

1

Make the peanut butter cream

Place the butter and sugar in a bowl and beat with an electric mixer until light and fluffy. Mix in the peanut butter.

2

Assemble the wafers

Use a small metal spatula to spread a thick layer of the peanut butter cream onto one wafer, spreading it all the way to the edges. Top with a second wafer and press gently. Spread with more cream, place a third wafer on top and press down.

3

Assemble the remaining wafers

Assemble 3 more wafer sandwiches the same way until all the cream is used up. Spread the remaining cream over the sides of each sandwich. Refrigerate for at least 30 minutes to firm up.

4

Cut

Use a serrated knife to cut each fan into 3 equal pieces and arrange in a single layer on a small baking sheet.

5

Melt the chocolate

Break the dark chocolate into pieces, place in a heatproof bowl and melt over a pan of simmering water, stirring frequently. Remove from the heat and let cool for a few minutes.

6

Decorate

Drizzle the melted chocolate in lines over the wafers. Let set in a cool place for at least 1 hour.
