Pearl Sweet Rice Wine Soup
A sweet-and-tangy dessert soup with a mellow wine aroma, made from fermented glutinous rice, small lumpy rice balls, and egg ribbons.
Ingredients
fermented sweet rice (laozao)
to taste
glutinous rice flour (mixed with a little cold water into small crumbs)
to taste
egg (beaten into ribbons)
to taste
sugar
to taste
osmanthus flowers
to taste
Instructions

Step 1
Mix the glutinous rice flour with a little cold water, stirring until it forms small crumb-like pieces similar to those used for drop noodle soup.

Heat the fermented sweet rice in a pot. Once it comes to a boil, sprinkle the flour crumbs into the pot a handful at a time, stirring constantly, and simmer over low heat for 2–3 minutes.

When the small dumplings fully float to the surface, drizzle in the beaten egg to form ribbons. Once the egg ribbons float, turn off the heat and sprinkle with osmanthus flowers and sugar.
