Ingredients

unsalted butter (melted) 3 tablespoons plus 2 teaspoons
chopped pecans 1 cup (4 ounces)
all-purpose white flour 1/2 cup plus 1 tablespoon
large egg 1
baking soda 1/4 teaspoon
salt 1/4 teaspoon
vanilla extract 1 1/4 teaspoons
packed light brown sugar 1 1/4 cups

Instructions

1

Preheat and Prepare

Preheat the oven to 350°F. Line several baking sheets with aluminum foil. Grease the foil or spray with nonstick spray.

2

Toast Pecans

Spread the pecans on a small baking sheet and place in the oven, stirring occasionally, for 5 to 8 minutes until lightly colored; be careful not to burn. Immediately transfer to a small bowl; set aside.

3

Mix Dry Ingredients

Stir the flour, baking soda, and salt together thoroughly in a small bowl; set aside.

4

Mix Wet Ingredients

In a medium bowl, vigorously stir the brown sugar and butter until completely combined. Beat in the egg and vanilla until evenly blended.

5

Mix Dough

Stir in the flour mixture, then the pecans, until evenly combined.

6

Shape

Drop the dough by full teaspoons onto the baking sheets, spacing about 2 1/2 inches apart to allow for spreading.

7

Bake

Bake one sheet at a time in the upper third of the oven for 7 to 9 minutes until evenly golden. Rotate the pan front to back halfway through baking to ensure even browning.

8

Cool

Slide the wafers with their foil onto a wire rack. Let stand until completely cool. Carefully peel the wafers off the foil. If the cooled wafers are not crisp or don't peel easily from the foil, they are undercooked. Return them to the oven for a few more minutes.
