Plain Mini Crêpes

Soft and delicate thin pancakes filled with fruit soaked in maple syrup.

Plain Mini Crêpes

Ingredients

crêpe mix 150 g
egg 1
milk 3/4 cup
plain yogurt 1/4 cup
orange 2
grapefruit 1
maple syrup (with crêpe mix added) 2
blueberries, raspberries, mint to taste

Instructions

Making crêpes – Step 1

Crack the egg into a bowl, beat it lightly, then add the milk and yogurt and whisk with a hand mixer.

Making crêpes – Step 2

In a separate bowl, add the crêpe mix and make a well in the center. Slowly pour in the mixture from Step 1 in two batches, stirring outward from the center until smooth.

Making crêpes – Step 3

Heat a non-stick pan over medium-low heat, then briefly remove from the heat. Spoon the batter from Step 2 into the pan to form circles about 8 cm in diameter.

Return the pan to low heat. Cook until small bubbles form and burst on the surface, then flip and cook for another 1–2 minutes.

Prepare and plate the fruit in syrup – Step 1

Peel the orange and grapefruit (removing the thin peel and pith), then toss them with the maple syrup.

Prepare and plate the fruit in syrup – Step 2

Arrange the crêpes on serving plates, spoon the fruit and syrup mixture from Step 1 evenly over them, and scatter the raspberries, blueberries, and mint on top.
