Portuguese-Style Braised Pork with Potatoes and Herbs

Ingredients

pork (cut into chunks, loin or pork belly can be used) 500 g
garlic chili sauce 2 tbsp
white wine 2 cup
coarse salt to taste
paprika 1 tbsp
fresh cilantro (chopped) 2 tbsp
bay leaves 2 slices
rosemary 1 tbsp
olive oil to taste
potatoes (cut into chunks) 5 large
garlic (minced) 5 cloves

Instructions

Marinate

Mix the pork with garlic chili sauce, coarse salt to taste, 1 tbsp cilantro, rosemary, bay leaves, minced garlic, paprika, white wine, and olive oil to taste. Stir thoroughly, cover, and marinate overnight.

Cook

Cut the potatoes into chunks and parboil in salted water. Heat a small amount of olive oil in a frying pan, add the pork chunks, and cook over medium heat until the meat changes color. Add the potatoes and continue cooking over high heat for approximately 4 minutes. Sprinkle with rosemary and cilantro, serve immediately with a glass of red wine.
