Ingredients

egg whites 2
powdered sugar (sifted, plus extra for dusting) 50 g
almond or vanilla extract 1 tsp
melted butter 25 g
all-purpose flour 50 g
shredded coconut (lightly toasted) 25 g
paper strips with messages to taste

Instructions

1

Prepare the Oven

Preheat the oven to 190°C (Th. 6). Prepare 2 to 3 sheets of parchment paper cut to the size of the baking sheet (reusable). On each sheet, draw 2 to 3 circles of 7.5 cm in diameter, with slight spacing. Place the parchment paper on the baking sheet.

2

Make the Batter

In a bowl, whip the egg whites to stiff peaks. Gradually add the powdered sugar in small amounts. Add the almond or vanilla extract and the butter. Add the flour and stir until a smooth batter forms.

3

Bake

Place 1 teaspoon of batter in the middle of each drawn circle on the paper, spread to fill the outline. Sprinkle with shredded coconut. Bake in batches (otherwise the cookies will harden before you can fold them), for 5 minutes, until the edges begin to turn slightly golden.

4

Fold

As soon as they come out of the oven, fold the cookies in half over a cup. Once hardened, transfer to a cooling rack. Continue baking the next batch. Use the rim of the cup to curve the center of the cookies into an arc.

5

Decorate

Insert the fortune paper slips into the cookies. Dust with powdered sugar and serve.
