This rustic soup proves that simple ingredients can create something deeply satisfying. By cutting the potatoes into matchsticks, they cook quickly and absorb the flavor of the broth perfectly, while the cabbage adds a lovely sweetness and texture.

Ingredients

Medium potato, peeled 1
Green cabbage, torn 2 cups
Vegetable oil 1 tbsp
Water or chicken broth 3 cups
Salt to taste
White pepper pinch

Prepare the potatoes

Slice the peeled potato into thin matchsticks. Soak them in a bowl of salted water for a few minutes to prevent discoloration.

Sauté the potatoes

Heat oil in a pot over medium heat. Drain the potatoes and add them to the pot, stir-frying for 2-3 minutes until slightly softened.

Simmer the broth

Pour in the liquid ensuring it covers the potatoes. Bring to a boil, then lower the heat and simmer for roughly 10-12 minutes.

Add the cabbage

Toss the cabbage leaves into the pot. Continue cooking for 5-7 minutes until the cabbage is tender.
