Story

This nutritious meal comes together quickly for busy mornings. The combination of protein from egg and sausage, fiber from whole wheat bread and spinach, plus vitamins from dragon fruit makes it an ideal start to any day.

Ingredients

whole wheat bread 2 slices
eggs 2 large
breakfast sausage 2 links
fresh spinach 2 cups
dragon fruit 1 medium
salt to taste
pepper or your favorite seasoning to taste
cooking oil 1 tablespoon

Instructions

Prepare the spinach

Bring a small pot of water to a gentle boil. Add the spinach and cook for about 1-2 minutes until just wilted. Drain well and season with a pinch of salt.

Cook the sausage

Heat a teaspoon of oil in a non-stick skillet over medium heat. Add the sausage links and cook for 4-5 minutes, turning occasionally, until golden brown and cooked through. Remove and set aside.

Fry the eggs

In the same skillet, crack the eggs and fry to your liking. Season with salt, pepper, or your preferred spices. For a runny yolk, cook for 3-4 minutes over medium-low heat.

Toast the bread

Toast the whole wheat bread slices until golden and crisp.

Prepare the fruit

Cut the dragon fruit in half, scoop out the flesh, and slice into bite-sized pieces.

Assemble and serve

Arrange everything on plates: one slice of toast, one fried egg, one sausage link, a portion of spinach, and a handful of dragon fruit. Serve immediately while warm.
