Pumpkin Baked Waffles

Ingredients

Pumpkin flesh 500 g
Eggs 4
Flour 300 g
Baking powder 1/2 pack
Butter (melted) 100 g
Milk 0.5 L
Gouda cheese (grated) 70 g
Chives (chopped) 1 handful
Salt to taste
Pepper to taste

Step 1

Peel, seed, and cube the pumpkin. Boil in salted boiling water for 10 minutes. Drain, then mash with a fork. Separate egg yolks and egg whites. In a bowl, mound flour and baking powder into a well, add melted butter, egg yolks, salt, and pepper, and mix thoroughly with a spatula. Warm the milk in a pot, stir in the pumpkin puree, then pour into the batter and stir continuously until smooth. Whip the egg whites to stiff peaks, then gently fold into the batter. Cover with a cloth and let rest for 1 hour.

Preheat the waffle iron and brush with oil. Cook each waffle for 3 to 4 minutes. Sprinkle with grated Gouda cheese, place on an oven rack, and bake for 2 minutes. Garnish with chopped chives.
