Purple

White glutinous rice soaked in a purple dye made from cooked black glutinous rice, producing a beautifully colored traditional Laotian-style rice.

Ingredients

black glutinous rice (see page 19) 1 cup
Water (for boiling black rice) 6 cups
white glutinous rice (see page 19) 2 cups

Instructions

Step 1

In a large pot, combine the black glutinous rice with 6 cups of water and bring to a boil over high heat. Reduce to low heat and simmer until the water turns a deep ink-purple color, about 10 minutes.

Step 2

Strain the mixture through a fine-mesh sieve, separating out the black rice and collecting the colored water in a large bowl. Reserve the black rice for other uses or discard.

Step 3

Soak the white glutinous rice in the colored water for at least 1 hour, preferably 4 hours. The white grains will absorb the purple color. Drain, then proceed according to the instructions for steaming white glutinous rice (see page 38).
