Qiang Youcai (Blanched Chinese Greens with Hot Chili Oil)

Qiang Youcai (Blanched Chinese Greens with Hot Chili Oil)

Ingredients

youcai (Chinese rapeseed greens) 2500 g
fine salt 5 qian
chili oil (heated) 5 qian
ginger (minced) 3 slices
scallion (shredded) 1 qian

Instructions

Step 1

Wash the youcai after removing the tough stem bases, then slice it diagonally into pieces about 8 fen (~2.5 cm) long.

Blanch the greens in boiling water until just tender, then remove and drain thoroughly.

Toss the drained greens with the fine salt and arrange on a serving plate. Sprinkle with the shredded scallion and minced ginger. Heat the chili oil until smoking hot and pour it over the dish to finish.
