Instructions
Get everything ready
Crack the eggs into a bowl and whisk them with a pinch of salt and pepper. If you like fluffier eggs, add a splash of milk. Shred the cheese and slice the banana.
Make the toast
Pop the bread slices into the toaster and toast until golden brown, about 2-3 minutes. While that's working, move on to the eggs.
Cook the eggs
Melt the butter in a non-stick pan over medium-low heat. Pour in the beaten eggs and let them sit for about 30 seconds. Gently push the eggs from the edges toward the center, forming soft curds. When they're almost set but still slightly wet, sprinkle the cheese on top and fold gently. Remove from heat while they still look a bit wet—they'll continue cooking from residual heat.
Serve it up
Plate the scrambled eggs alongside the toast. Slice the banana and arrange it on the side. Pour yourself a glass of milk or juice if you like. Eat while everything is still warm.
