Ingredients

baby bok choy 1 pound (about 5-6 small heads)
vegetable oil 2 tablespoons
garlic cloves 3, minced
salt to taste
chicken powder a pinch, optional

Prep the bok choy

Trim the ends and separate the leaves. Rinse thoroughly under cold water to remove any dirt. Cut into roughly 2-inch pieces, keeping the tender stems and leaves together.

Blanch the greens

Bring a medium pot of salted water to a rolling boil. Add the bok choy pieces and cook for 2-3 minutes until they're bright green and just tender. Drain well and set aside.

Stir-fry with garlic

Heat oil in a wok or large skillet over medium-high heat. Add the minced garlic and stir for about 30 seconds until fragrant—don't let it brown. Add the blanched bok choy and toss everything together for 1-2 minutes.
