Story

This recipe recreates a popular savory street food favorite. The secret lies in the butter-enriched dough and the quick blanching of the beef to keep it tender.

Ingredients

All-purpose flour 200g
Water 100ml
Butter 40g (melted)
Sliced beef (fatty) 200g
Onion 1/2 (sliced into strips)
Bell pepper (mixed colors) 1/2 (sliced into strips)
Cooking oil 1 tbsp
Light soy sauce 1 tbsp
Dark soy sauce 1 tsp
Oyster sauce 1 tbsp
Black pepper sauce 1 tbsp
Sugar 1 tsp
Cooking wine 1 tbsp

Prepare the Dough

Mix the flour and water until no dry powder remains. Pour in the melted butter and knead thoroughly until the dough is smooth and uniform. Let it rest for about an hour to ferment.

Blanch the Beef

Bring a pot of water to a boil, then turn off the heat. Gently slide the beef slices into the hot water. As soon as they change color, remove them and drain thoroughly to remove excess moisture.

Stir-Fry Filling

Heat oil in a pan and sauté the onion strips until soft. Add the cooked beef, remaining butter, light soy sauce, dark soy sauce, cooking wine, sugar, oyster sauce, and black pepper sauce. Stir well, then add the bell peppers and cook until just tender. Discard any excess liquid released during cooking and let the filling cool completely.

Assemble and Cook

Divide the dough into portions and roll them out into thin circles. Place a generous amount of the cooled beef filling in the center and wrap the dough around it. Pan-fry or bake the rolls until the crust is golden brown and crispy.
