Red Bean Paste Buns
Before the Mid-Autumn Festival, I used the homemade red bean paste leftover from making mooncakes to make red bean buns. The fluffy buns with the sweet, smooth red bean paste are especially loved by mom.

Step 1
Dissolve the yeast in warm water and pour it into the bread machine pan.
Step 2
Add the sugar, flour, and milk powder.
Step 3
Place the bread pan into the bread machine.
Step 4
Start the kneading program for 13 minutes (kneading time varies depending on the bread machine model). When kneading is finished, cover the bread pan with a damp cloth, then close the bread machine lid, and let the dough ferment until doubled in size. If the room temperature is high, you do not need to turn on the bread machine's fermentation function.
Step 5
While the dough is fermenting, prepare the red bean paste filling by dividing it into 16 portions of 20g each and rolling them into balls.
Step 6
Once the dough has doubled in size, take it out and place it on a work surface. Knead continuously for several minutes until the dough becomes smooth again.
Step 7
The cut surface should have no large air bubbles, so that the steamed buns will turn out smooth.
Step 8
Divide the dough into 16 portions, roll each into a round shape with a thick center and thin edges.
Step 9
Place the red bean paste filling inside.
Step 10
Pinch the edges to seal, place in the steamer, and let them proof for 20 minutes (if the temperature is low, you can add hot water to the pot to aid fermentation).
Step 11
Place in the steamer with cold water, bring to a high heat, then reduce to medium-low and steam for about 14 minutes. Turn off the heat and let it rest for 3 minutes before opening the lid.
