Red Bean Paste Cake
A traditional Shanxi red bean paste cake, crafted into a round egg shape with a snow-white appearance reminiscent of pigeon eggs, boasting a sweet, refreshingly cool flavor.

salad oil (for greasing the pan)

Grease the pan with a layer of salad oil, then dust with a thin layer of flour.

Preheat the oven to 180°C.

Mix all ingredients (except the red bean paste) with a mixer until smooth batter.

Pour half the batter into the pan, bake for 12 minutes, then remove. Spread the red bean paste in the center.

Then pour in the other half of the batter and bake for another 12 minutes. Test with a toothpick; if not fully cooked, bake for 5 more minutes and check again.
