Instructions
Step 1
Place all ingredients except butter and salt into the bread pan.
Step 2
Once the dough becomes smooth, add butter and salt and continue kneading (salt-after-butter method).
Step 3
After the butter is incorporated, you can snip the dough a few times with scissors and continue kneading.
Step 4
The dough after kneading.
Step 5
Cut off a small piece of the kneaded dough; it should stretch into a thin film that does not tear easily.
Step 6
Shape the dough, place it on a baking sheet, and proof for the second time. When proofed, poke a hole with a flour-dusted finger — the dough should neither spring back nor collapse.
Step 7
Divide the dough into six portions, roll each into a ball, and let rest for about 10 minutes.
Step 8
Flatten one portion of dough and place some red bean paste in the center.
Step 9
Seal the dough with the seam facing down.
Step 10
Roll it out into an oval shape.
Step 11
Cut four slits down the middle, leaving both ends intact.
Step 12
Pull the two ends and twist once around.
Step 13
Tie a single knot and place into a paper liner.
Step 14
Arrange them on the baking sheet one by one.
Step 15
Cover with plastic wrap and proof for the second time.
Step 16
Once proofed, gently brush a thin layer of egg wash on top.
Step 17
Preheat the oven in advance. Bake on the middle rack at 150°C for about 25 minutes (time and temperature are for reference only). Cover with foil once the surface is nicely browned.
Step 18
Let cool until warm to the touch, then seal in a bag for storage.
