Red-Braised Beef Brisket

Ingredients

beef brisket (blanch in boiling water until tender, then dice into small cubes) 500 g
fermented bean paste 3 tsp
Shaoxing wine 3 tsp
dark soy sauce 3 tsp
light soy sauce 3 tsp
sugar 3 tsp
minced garlic (peel and mince the garlic) 3 tsp
ginger (peel and slice) 1
secondary stock 5 cup
cornstarch slurry 2.5 tsp
peanut oil 1 tbsp

Instructions

Step 1

Blanch the beef brisket in boiling water until tender, then dice into small cubes.

Peel and slice the ginger; peel and mince the garlic.

Heat a wok over high heat, add peanut oil and heat to about 40% hot. Add the fermented bean paste, minced garlic, and ginger slices and stir-fry until fragrant. Add the beef brisket, pour in the Shaoxing wine, then add the dark soy sauce, light soy sauce, sugar, and secondary stock. Simmer briefly, thicken with the cornstarch slurry, plate, and serve.
