Red-Braised Pork Trotters
Water should only be added after the soy sauce comes to a boil, as soy sauce is a fermented ingredient.
Story
Mastering this classic dish relies on a unique culinary technique rooted in the science of its seasonings. Because soy sauce is a fermented ingredient, it is essential to let it boil briefly before introducing water to the pot. This careful preparation ensures the rich, complex flavors are properly awakened for the perfect braise.
