Red-Braised Shark Fin

Ingredients

water-soaked shark fin 750 g
fat hen (split open and blanched) 1
cooked ham 250 g
pork shoulder (boned and blanched) 750 g
Shaoxing wine 10 g
scallion knots 10 g
ginger slices 7 g
fine salt 10 g
soy sauce 10 g
sugar 2 g
white pepper 1 g
MSG 2 g
wet cornstarch slurry 10 g
rendered lard 50 g

Blanching

Place the water-soaked shark fin in a pot of boiling water to remove its fishy odor. Split open the cleaned hen's back and blanch it in boiling water. Bone the pork shoulder, split it open, and blanch.

Steaming for Flavor

Prepare a porcelain bowl and neatly arrange the shark fin inside. Place the ham in the center, followed by the pork shoulder, and finally the hen. Add Shaoxing wine, scallion knots, and ginger slices, then steam over water for 2 hours. Remove the hen, pork shoulder, ham, and other ingredients for other uses. Invert the shark fin onto a large serving plate.

Thickening and Pouring the Sauce

Pour the broth from the bowl into a pot. Add soy sauce, sugar, fine salt, white pepper, and MSG, and bring to a boil. Thicken with the wet cornstarch slurry, drizzle with rendered lard, and pour over the shark fin to finish.
