Red Curry Ground Meat Muffins

Ingredients

all-purpose flour 250g (about 2 cups)
baking powder 2 tsp
salt 1/4 tsp
eggs (shells removed, beaten) 2
sugar 5 tbsp
coconut milk 3/4 cup
oil (plus 3 tbsp extra for sautéing) 1/2 cup
red curry paste 2 tbsp
ground meat (pre-cooked) 100g
shallots (trimmed, peeled and minced) 5
minced garlic 1 tbsp
sliced almonds to taste

Instructions

Step 1

Sift the all-purpose flour together with the baking powder and salt into a bowl.

Trim the shallots, peel off the outer skin, and mince them. Heat 3 tbsp of oil in a pan, add the shallots and minced garlic and sauté until fragrant. Add the ground meat and stir-fry until the meat grains are separated, then add the red curry paste and stir-fry until fragrant.

Beat the eggs (shells removed) and mix in the sugar until well combined. Add the coconut milk and the remaining oil and mix well, then pour over the flour and stir a few times. Fold in the pre-cooked ground meat gently to avoid developing gluten.

Grease the muffin cups or line them with paper cups. Fill each with batter to about 3/4 full, sprinkle with sliced almonds, and place in a preheated oven. Bake at 175°C for about 25 minutes.
