Red Wine Fruit Jelly

Cool, translucent jelly studded with plenty of fruit — an irresistibly charming dessert.

Red Wine Fruit Jelly

Ingredients

sweet white wine 300 ml
water 300 ml
fine granulated sugar 75 g
powdered food-grade gelatin (sifted into cold water to bloom) 15 g
cold water 75 ml
melon (flesh scooped into balls, juice drained) 1/2
canned yellow peaches (cut into 2 cm squares, juice drained) 1/2 can (85 g)
strawberries (for garnish) to taste

Instructions

Step 1

Combine ingredients A in a pot and turn on the heat. Once the sugar has dissolved, turn off the heat. Add the gelatin and stir until completely dissolved.

Once step 1 has cooled down, stir in the wine. Pour a ladle of the jelly mixture into a moistened square mold and place in the refrigerator to set. Keep the remaining jelly liquid at room temperature to prevent it from setting.

Step 3

Once step 2 has set, scatter the melon and peaches on top, pour over the remaining jelly liquid, and return to the refrigerator to set again.

Once step 3 has set, dip the mold briefly in hot water. Then invert onto a plate, remove the mold, and decorate the center with strawberries.
