Instructions
Step 1
Split the processed cleaned baby chicken down the middle of the spine, make a cut at the thigh, remove the claw tips, and break the chicken wings with a knife. Evenly coat the entire chicken with a layer of soy sauce, then deep fry briefly in 80% hot peanut oil. Take it out and place it in a baking tray.
Step 2
Scatter scallion segments and ginger slices over the chicken, then pour in clear soup, soy sauce, and scallion oil. Sprinkle with MSG and coarse salt, place in the oven to roast for about 10 minutes. When the chicken turns golden brown, take it out, cut it into strips 3.3 cm long and 1 cm wide, arrange them on a plate in the original chicken shape, and pour the reserved cooking broth over.
Step 3
Wash the lettuce, cut it into 3.3 cm long segments, and place on both sides of the chicken before serving.
